Tomato Vodka Sauce

Tomato Vodka Sauce (Joanna's recipe)

1/2 cup butter
1 onion diced
2 garlic gloves minced
1 cup Vodka
1/2 tsp, (more if you like spice) red pepper flakes
2 28 oz cans of crushed tomatoes (San Marzano best)
1 pint (2 cups) heavy cream
Cooked penne pasta

1) In a skillet over medium heat, sautce onion in butter until tender but not yet brown.
Pour in vodka and cook for 10 minutes
add garlic

2) Mix in tomatoes and cook 30 minutes at a simmer.
Add heavy cream and pepper flakes. Simmer another 30 minutes.
Season with salt and white pepper.

Serve over pasta with fresh parmesan cheese.
