Quesadillas
Ingredients: - 4 large flour tortillas - 2 cups shredded cheese (such as cheddar or Monterey Jack) - Optional fillings: cooked chicken, cooked ground beef, sautéed vegetables, beans, etc. - Optional toppings: salsa, guacamole, sour cream, chopped cilantro, etc. - Optional seasonings: cumin, chili powder, paprika, garlic powder, etc. Instructions: 1. Preheat a large non-stick skillet or griddle over medium heat. 2. Place one tortilla on the skillet and sprinkle about 1/2 cup of shredded cheese evenly over the tortilla. 3. If desired, add any fillings or seasonings on top of the cheese. 4. Place another tortilla on top to create a sandwich. 5. Cook for 2-3 minutes, or until the bottom tortilla is golden brown and crispy. 6. Carefully flip the quesadilla with a spatula and cook for an additional 2-3 minutes on the other side until the cheese is melted and the tortilla is crispy. 7. Repeat the process with the remaining tortillas and fillings. 8. Once the quesadillas are cooked, transfer them to a cutting board and let them cool for a minute or two. 9. Cut the quesadillas into wedges or squares and serve with your desired toppings or dipping sauces.
