Mashed Cauliflower
Mashed Cauliflower (Joanna's) 1 head cauliflower 2 cloves garlic, peeled 2 tbsp cream cheese 1/4 c grated parmesan 2 tsp chicken stock base 1 tbsp unsalted butter 1/4 tsp white pepper salt to taste fresh chives for garnish, optional Bring large pot of water to boil. Cut cauliflower into small pieces, add to water, and boil until very tender for 6-10 minutes. Drain well in a colander for a few minutes, return to hot pan. Mash/puree with an immersion blender until smooth. Stir in remaining ingredients, adjust seasonings, garnish with chives. Can be made ahead and reheated. Prep: 20 minutes Serves: 4-5
