Lemon Orzo Chicken

Ingredients:

- 2 boneless, skinless chicken breasts
- 1 cup orzo pasta
- 2 tablespoons olive oil
- 2 cloves garlic, minced
- Juice and zest of 1 lemon
- 1 cup chicken broth
- 1/2 cup grated Parmesan cheese
- Salt and pepper to taste
- Fresh parsley for garnish (optional)

Instructions:

1. Season the chicken breasts with salt and pepper on both sides.
2. In a large skillet, heat olive oil over medium-high heat. Add the chicken breasts and cook until browned on both sides and cooked through, about 5-6 minutes per side. Remove the chicken from the skillet and set aside.
3. In the same skillet, add minced garlic and cook for about 1 minute until fragrant.
4. Add the orzo pasta to the skillet and stir to coat with the garlic and oil. Cook for 2-3 minutes until slightly toasted.
5. Pour in the chicken broth, lemon juice, and lemon zest. Bring to a boil, then reduce heat to low, cover, and simmer for about 10-12 minutes or until the orzo is tender.
6. Stir in the grated Parmesan cheese until melted and well combined.
7. Slice the cooked chicken breasts into thin strips.
8. Serve the lemon orzo on plates or bowls, then top with sliced chicken.
9. Garnish with fresh parsley, if desired.
