Latkes Potato Pancakes

Latkes (Nancy's)

8 white rose or yellow potatoes
1 large onion
2 tbsp flour
1 tsp baking powder
3 eggs
2 tsp better than boullion chicken stock

In food processor, shred potatoes and slice the onion.
When potato is shredded, drain to get moisture out before adding onion. Try to get liquid out of the onions as well. 
Combine potatoes and onion in food processor bowl with chopping blade and pulse together 4-5 times.
Add eggs one at a time, pulsing after each.

Transfer to a bowl, mix in flour and soup base.

Fry in hot vegetable or conoloa oil at 350 degrees, drain on paper towels

Serves: 4
