Huevos Rancheros
Ingredients: - 4 large eggs - 4 corn tortillas - 1 cup of black beans, drained and rinsed - 1 cup of salsa (store-bought or homemade) - 1/2 cup of shredded cheese (cheddar or Monterey Jack) - 1 avocado, sliced (optional) - 1/4 cup of chopped fresh cilantro (optional) - Salt and pepper to taste - Cooking oil for frying Instructions: 1. Heat a large skillet over medium heat and add a small amount of cooking oil. 2. Once the oil is hot, add the corn tortillas, one at a time, and fry them until crispy. Flip them over and fry the other side as well. Repeat with the remaining tortillas and set them aside. 3. In the same skillet, add the black beans and cook them until heated through. Season with salt and pepper to taste. 4. In a separate smaller skillet, fry the eggs to your desired doneness (usually sunny side up or over easy). 5. To assemble, place a fried tortilla on a plate and top it with a spoonful of black beans. Add a fried egg on top of the beans and pour some salsa over the egg. 6. Sprinkle shredded cheese over the salsa and garnish with avocado slices and chopped cilantro if desired. 7. Repeat with the remaining tortillas, eggs, beans, salsa, cheese, avocado, and cilantro. 8. Serve the Huevos Rancheros immediately and enjoy!
