Ginger-Lime Key Lime Pie Cookies

Ingredients:

- 2 cups all-purpose flour
- 1 tsp baking powder
- 1/2 tsp salt
- 1/2 cup unsalted butter, softened
- 1 cup sugar
- 1 large egg
- 2 tbsp grated fresh ginger
- Zest of 1 lime
- 2 tbsp key lime juice
- 1/2 tsp vanilla extract
- 1/4 cup powdered sugar

Instructions:

1. Preheat oven to 350°F (180°C) and line a baking sheet with parchment paper.
2. In a medium bowl, whisk together flour, baking powder, and salt.
3. In a separate large bowl, cream together butter and sugar until light and fluffy.
4. Beat in egg, ginger, lime zest, lime juice, and vanilla extract until well combined.
5. Gradually mix in the flour mixture until a dough forms.
6. Scoop dough into 1-inch balls and place on the prepared baking sheet.
7. Bake for 10-12 minutes, or until edges are lightly golden.
8. Allow cookies to cool on the baking sheet for 5 minutes before transferring to a wire rack to cool completely.
