Fried Rice

Ingredients:

- 3 cups of cooked rice
- 2 tablespoons of vegetable oil
- 2-3 cloves garlic, minced
- 1 small onion, chopped
- 1 cup of mixed vegetables (frozen or fresh)
- 2 eggs, beaten
- 1 tablespoon soy sauce
- Salt and pepper to taste

Instructions:

1. Heat the oil in a large pan or wok over medium heat.
2. Add the garlic and onion and cook until fragrant.
3. Add the mixed vegetables and stir-fry for about 3-5 minutes.
4. Push the vegetables to one side of the pan and add the beaten eggs to the other side. Scramble the eggs until cooked.
5. Mix the eggs and vegetables together and add the cooked rice. 
6. Pour the soy sauce over the rice and stir everything together until well combined.
7. Season with salt and pepper to taste.
8. Cook for an additional 3-5 minutes, stirring frequently, until the rice is heated through and slightly crispy.
9. Serve hot and enjoy!
