Crab Bisque
Ingredients: - 1/4 cup butter - 1/4 cup all-purpose flour - 4 cups milk - 1 cup heavy cream - 1/4 teaspoon white pepper - 1/4 teaspoon paprika - 1/4 teaspoon salt - 1/4 teaspoon dried thyme - 1/4 teaspoon dried basil - 1/8 teaspoon cayenne pepper - 1 pound lump crabmeat, drained and picked - 1/4 cup dry sherry - 3 tablespoons chopped fresh parsley Instructions: 1. In a large pot, melt butter over medium heat. Add flour and stir until smooth. Cook for 3-5 minutes or until golden brown, stirring constantly. 2. Gradually whisk in milk and cream. Bring to a boil over medium heat, stirring constantly. Reduce heat and simmer for 10-15 minutes or until slightly thickened. 3. Add white pepper, paprika, salt, thyme, basil, and cayenne pepper to the pot. Stir well to combine. 4. Gently fold in crabmeat and sherry. Cook for 2-3 minutes or until heated through. 5. Serve hot, garnished with chopped fresh parsley. Enjoy your delicious crab bisque!
