Blueberry Cheesecake Breakfast Bars
Ingredients: - 2 cups old-fashioned oats - 1 cup almond flour - 1/2 cup coconut oil, melted - 1/4 cup honey - 1 tsp vanilla extract - 8 oz cream cheese, softened - 1/4 cup sugar - 1 egg - 1 cup fresh blueberries Instructions: 1. Preheat the oven to 350°F and line a 9x9 inch baking dish with parchment paper. 2. In a large bowl, mix together the oats, almond flour, coconut oil, honey, and vanilla extract until well combined. 3. Press half of the oat mixture into the bottom of the prepared baking dish to form the crust. 4. In a separate bowl, beat the cream cheese, sugar, and egg together until smooth. 5. Spread the cream cheese mixture over the oat crust, then sprinkle the blueberries on top. 6. Crumble the remaining oat mixture over the blueberries. 7.
